    There are people far more informed than me on this subject, but it occurs that this approach might be consistent with how brewing was done historically in Britain. Brewers could have had proprietary sugar products. They also would have used whatever was on hand / available. Thoughts?

    Absolutely. But if all you're looking for is a rough estimate of where you are in the process the calculator is a good option.

    That's what I would do. That 1.035 converts to about 8.8 brix. Plug that into the calculator with your OG and you should have at least a good approximation.

    Am I missing something? If you know the OG there are plenty of calculators that will help you approximate the gravity from your refractometer reading.
