    I have a small 5 stage portable filter from purewaterclub.com. The water is run through a series of carbon filters, RO filter, and DI filter. I don't have a TDS meter but I see where you're going.

    I guess I'm still confused as to why I'm extracting excessive tannins when sparging with RO water. I thought RO water had no buffering capacity which means my mash bed pH should not rise. Or am I all wet here?

    I tried that on the last batch. I chilled to 28 degrees and added Polyclar. Helped a little with the haze but still tastes very astringent. I would prefer to fix the problem upstream.

    Does anyone keep star-san in an extra keg? I'm thinking that with the O2 purged from the keg, the starsan would stay fresh indefinitely. Would be nice to have starsan ready to go whenever one would need to sanitize a line or beer gun. Not to mention not wasting CO2.

    One thing to note about COS water is that there are 5 different treatment plants with different sources for water. To further confuse the matter, they may also bring water from one plant to another area mixing water from the two sources.
