    Experimenting With Yeast

Highly recommend staying away from the Mangrove Jacks M44. Very long lag time and even when fermented at 65 degrees it is not very clean. I got some banana and clove esters almost heffe like which did not work in a DIPA but may work in a wheat. I have tried almost all of their yeasts and was at...

    Adding frozen strawberries

You don't even have to thaw them. Just add them to secondary and rack right on top of them. I prefer to pasteurize berries and puree them then add straight to primary near the end of fermentation or when fermentation is done. Adding to primary saves a step. If you are worried about oxidation add...

Given wrong grains. Will it still make a good beer?

The accidental beer screams lager yeast. If you can ferment lagers I'd give it a whirl and save the Belgian yeast for another brew. :)

I'm out of space - what are my options?

The 7.9 gallon wine buckets fit perfectly on the bottom shelf of a 4.3 cubic ft Avanti dorm fridge that does not have a freezer. No mods to the fridge are needed with this one. All you will need to do is build a bottom shelf out of wood to replace the glass shelf. I am using one now. It works...

IIPA recipe and batch size calculation question

I would calculate it a 4 gallons. You will want some crystal malt and perhaps some Munich malt to lend a bit of sweetness and malty backbone. I would omit the sugar unless you want to dry it out a bit. Something like this may work for you. 12lbs 2 row 1lb crystal 40 Your amber...

How to deal with hop debris in a hoppy DIPA

A sanitized paint strainer bag added to the fermentation bucket is what many use. I use a stainless steel food strainer that will sit on top of my bucket. I pour through it and stop when the strainer is full, empty, then repeat till I get all the wort in. The strainer also helps aerate :mug:

    Dry Hop - Bucket Fermentor

I dry hop in my fermentation buckets. Works well. I would not use soap stone for the weight however. Soap stone is porous and can harbor critters. I recommend using glass marbles or stainless steel bearings or washers. I use marbles when I use a bag.

    15 minute brew

There are many reasons to do a 60 minute boil. Not all apply to brewing with extract however. Good beer can be made doing short boil extract batches. I have made a few short boil batches. Hop utilization. Color. Develop flavors in the boil from caramelizing sugars and multiple hop...

    mini freezer

An Avanti 4.3 Cubic Ft fridge without freezer is what I am using for a fermentation chamber. The 7.9 gallon wine buckets fit on the bottom shelf with no mod other than building a wood shelf to set it on vs the glass on it comes with. Works great and you can easily find them used for $50 or less.

    Beer yeast for dough?

I have made soft pretzels with harvested yest. They came out great. Had to let the dough rise a bit longer than with regular bread yeast.

Great start, but unsatisfactory finish. Needs help.

Ok to round out the bitterness first wort hop. It takes the sharpness off while still achieving the desired effect. 2nd back off on the bittering hop addition a bit. Or use a lower AA hop. To get rid of some of the dryness perhaps add some extra crystal. If you were brewing all grain you would...

    The crazy @$$ recipe thread

Ok my turn. Popeye would be proud :rockin: 1 pound of peat smoked malt (double crushed - to extract all the goodness) 6.5 pounds Vienna 9 pounds extra light DME. 5 lbs German Wheat 1/2 pound of C40L 1 lb. black patent 1 LB Flaked Oats 2lbs whole leaf spinach (15min) 5 lbs of key limes...

    Corny cerveza??

DMS has a higher concentration in Pilsner malt and other lightly kilned malts requiring a longer boil to boil it off. Most say a 90 minute boil is sufficient to drive it off others say you should boil longer to completely get rid of it.

I am giving up beer for 30 days

OP how many pounds have you dropped so far? I second the kombucha idea and or making light sodas. Kombucha has a ton of health benefits and can flavored with fruit making for a great healthy treat. For soda a low sugar fizzy citrus soda could be awesome.

check valve or blow off tube?

A blow off tube stuck in a jar full of sanitizer works just as well as an air lock. This thread did get me thinking though. It may not be a bad idea to to add an actual check valve (not a airlock) to your blow off tube.... it would keep from sucking water back in while cold crashing :mug: I may...

back sweetened a batch of cider while kegging, carbed it, decided it was not sweet enough.......................pulled out the keg and added more sugar/condensed cider to keg......................instant cider volcano :drunk:. Over a gallon on the floor :smack: Don't do that!!!
