    Nelson Sauvin IPA - whew! grapes of wrath

    OG, ABV, and such

    Are you doing extract or all-grain? Either way, you could just add a lbs or two of dry extract. Since it's a IIPA, adding some hops to make sure it balances isn't all that risky. Just plug it in a program to see if you have enough IBUs. Alternatively, you could add a lbs or two of honey...

    Hydro reading on day 11.....question

    My understanding is that a low OG would correlate with less ABV, and less time for fermentation as there is less work for the yeast to do. However, this does not necessarily reflect conditioning. Longer conditioning times let the yeast clean up some by products, but the fermentation stage is over.

    Was at my local beer mecca (102 taps) and the bartender gave me the final sip of someone else's bottle, saying I had to try it. Needless to say, based on the date, I had to buy a bottle of my own. Delicious.
