    American Wheat Beer Mosaic Honey Wheat

    This beer scored a 36 and got an honorable mention in a recent event, common criticism was low carbonation (i bottle off the keg and this was a bit rushed, i was worried about this) and needed better head retention. This is a really nice beer, very enjoyable as we enter spring time.

    FWIW I did a simple pale ale with only Enigma hops because I never used them before. It was pretty good but I do get some green pepper with it. Mostly non-specific citrus and occasionally a hint of green pepper.

    Yeah what wilser said, I remove the hopper and lid and then pour into another bucket. I may try the bottomless bucket, eventually I want to make a cabinet for it. I will say the 3 batches Ive done since getting the mill Ive had 81%, 89% and 84% mash efficiency, full volume BIAB.

    Brewing this as i type, mash almost done. Same grain bill as op with 2oz of acid malt added. Adding some cascade to the whirlpool and dryhop as some mosaic only beers can taste a little cloying to me.

    Sweet Stout Deception Cream Stout

    So brewed this up 13 days ago, OG was 1.062 FG was stable at 1.022 so racked to keg tonight. 5.3% sample actually tasted good, first time i can say that about any beer. Big coffee flavor. Ill put it on gas tomorrow and pull a pint in a week. Looks like it will be another good beer!

    Good luck, i used the same water profile and got the same OG as you. Mine stopped at 1.030 and around 9.6%, its about 8 months old now and its almost gone, was a fantastic beer tho. I only did a 2l starter of 1056 and shook the carboy, no o2. I wish i would have done a partigyle like you did.

    You are lucky to have a lhbs with good prices, i can get grains from several online retailers (not NB) with shipping included for less than from my lhbs

    Finally got around to upgrading the hopper, so nice to get the full grain bill all at once. Beersmith measured 89% mash efficiency for this batch. Im a happy camper.

    Bulk storage of grains?

    Empty icing buckets free from the grocery store and 1 homer bucket with gamma lid. I need to get some more 5gal icing buckets, mine are all in use not storing grain. Getting right at 5lb of grain per gallon.
