What did I cook this weekend.....

Bummer. Did you make and cook the tortillas first? Corn tortillas are so cheap I just start with them when making tortilla chips :)

What did I cook this weekend.....

Oh, that's just awesome! I can't believe I have not seen that before! Back when I was a kid and worked at Shakey's Pizza we did fried chicken and fried breaded potatoes for a lunch buffet in two big industrial pressure fryers. Those would pump the oil through filters which we did after each...

What did I cook this weekend.....

Those look great Andrew!! I'm curious what you and others are here doing with your oil after frying. Do you filter and reuse? If so how and with what? Any special storage between uses? Just curious, because I seem to waste a lot of oil when deep frying stuff, mostly because I leave it in...

At Lowes? Seriously? I have found several Lola's at local grocery stores but have not found that one. I have never seen hot sauce at Lowes.

    The Home Made Pizza Thread

I finally pegged what I have been after for thin, cracker style crust pizzas last night. Did two pizzas in my 14" cutter pan on a preheated steel at max oven temp. Each cooked about 10 minutes. Both had mozzarella, some medium cheddar, Provolone, Pecorino Romano, and Parmigiana Reggiano...

What did I cook this weekend.....

Served the Focaccia as a side for Pasta e Fagioli. Both recipes were firsts for me. Strangely, the Pasta dish was the first time I have cooked with leeks and with kale!! I'm in love with both now, as least in soups. (Note: I did not have enough ditalini, so I added some mini penne to make up...

What did I cook this weekend.....

Well, the Focaccia turned out pretty great! Had some sticking on one side of the pan which is amazing given how much oil was on the pan. But it’s a pretty new 1/2 sheet pan so not unexpected. Flavor is amazing though!

What did I cook this weekend.....

Honestly, she is excellent and it is traditional and great. I would add a little toasted cumin, and probably something to kick the heat up a bit, like cayenne, dried chipotle, or canned chipotle in adobo, but that is all personal preference based on the heat level you want. I think her recipe is...

    Off the cuff Purple Sauerkraut

Was looking at this thread again. @Temptd2 Over Christmas I finally did make that red cabbage dish I was talking about here back in 2019! 😁 I think I posted it on the cooking thread. Not fermented, but was a German/Polish recipe called Rotkohl and it was just awesome! But now that my peppers...
