    I also have one of those True Brew pails. The little "slots" around the edge of the lid (made with thinner plastic) are meant to be cut with a razor knife or something. Once you cut a few of them you'll find the lid is much easier to get on and off.

    I recently bottled a doppelbock after 4 weeks of lagering (AHS kit). Will the carbonation take longer because the yeast is "dormant" (probably not the right word) after 4 weeks at 40 F? Just curious. Tom

    extremely doubtful. I'm sure the 2 gallons of cold water brought your wort to between 90 and 100. Even 24 hours isn't unusual for fermentation to start.

    Or... just take your foil capped bottles and put them in the oven for 45 minutes at 350 or so. Might use less energy than a wash cycle in the dishwasher, and is probably more effective at sanitizing. Tom
