    What are you drinking now?

    Dom Perignon 1989, have had the bottles for like over 10 years in my wine cellar. Just a touch to dry for my tastes but the wife and her friends absolutely fawned over it. Still not a bad way to toast the new year (had 3 bottles of the same year). -deicide

    Primary fermentation CO2 for carbonation?

    I think the main reason would be how would one control the vols. of co2 under those conditions. I would bet with a very rigorous fermentation you would be way over carbonated compared the small amount of sugar you add for priming. By no means an expert but my 2% of a dollar.
