    Fermentation Question

    I dont think 73 is too warm for a wit. I just made up one and started it at 68 and let it ramp up to almost 80. Belgians in my opinion need a higher ferment to get that funk. Of course Jamil disagrees, so I would go with him on ferment temps.

    I'd suggest getting a cheap garbage can and fill it with ice, or get 2 and have kegs in different locations.

    Willamette in Hefeweizen?

    Yeah, hefe's really dont have a flavor/aroma addition unless you want to put one in there. a 60 min boil will leach pretty much all flavor of the hops out leaving just bitterness.

    Hopbursting is a great way to get the full flavor from your hops. Very smooth bitterness. Dont know about your grain bill, but the hops look good! Only problem with hop bursting is kinda goes away pretty quick, but if you bring the keg to the picnic that wont be a problem!

    No they wont grow mold. I dry hop in the keg and crap escapes the pantyhose all the time. No problems.

    Ranco Electronic Temperature Control

    I just did this 2 nights ago. Used the link from the brewboard and everything went fine. Hardest part was getting the wires into the tiny holes. Cursed these meathooks I call hands! Now my Dortmunder is nice and chilly at a stable 49F. No more ice bottles for me!

    I just listened to an old BrewCaster Sunday episode that delt with Doc describing his brewday. Jamil and McDole were also in the studio. Both of them said force carb using a chart like the one posted above. McDole uses 30psi and shakes till he "knows its done" Damn telepathy! Or he hits it...

    My Kolsch is fermenting but...

    I made up a batch of Scottish 70/. Got the yeast from a fellow homebrewers Scotch ale and mam that fermentation smelled really, really bad. Beer is really really good though. Even cvalled Wyeast to verify that a Scottish yeast could smell like that. The lab guy said yup, it can.

    Monteith’s Summer Ale Clone/Ballpark

    Ahh Monteith's. Went to NZ on our honeymoon. Didnt try the Summer (it was winter there), but took a tour of the brewery. The lady who showed us around told us that Montieths is available at some Trader Joe's. I believe only on the west coast though. They sure dont have any here in Ohio!
