Stroke is an outline of the elements of the layer. It'll put a border around the text to make it pop. I personally use stroke extensively, all those black outlines are stroke.

You need something to make the dark text stand out from the background. I've always used stroke in photoshop. An alternate solution would be to make the text lighter. Love the picture!
