    P. S. How does nutrients cause sulfur? I thought lack of nutrients causes stress. And how can nutrients not be good for wild yeast? It helps with cell development.

    The sulfate at bottling helps with oxidizing. The fact that it’s 6% alcohol takes care of any bacteria. Temps. I’m stuck with what the cellar is.

    I got 6 gal. Fresh pressed on Tuesday. Wednesday I added yeast nutrients but no Camden and pitched no yeast. Wednesday night a couple of bubbles in the airlock. Thursday afternoon bubbling away! That’s faster than pitching.

    My son works in an orchard in upstate NY that makes their own cider. He sent me this last night, “Pressing a bunch of cider apples tomorrow. Dabinett, kingston black, somerset redstreak, chisel jersey, ashmeads kernal, yarlington's mill”

    Buckets without a gasket are a crapshoot. I have several. Some seal sometimes but not all everytime. I still use them for primary fermentation with no problems.

    I like the various flavors many of you mentioned, in a flight. But when I’m drinking cider I prefer a dry or off-dry sparkling or still just apple cider. The various varietals and blends are why I really love the three I mentioned.

    Between the Berkshires (Mass.) and the Hudson Valley & Finger Lakes (NY) there are a lot of good and some really good cideries. But most sell large bottles at the farm or thru a few select wine stores.

    I know plenty of people that make cider and wine with only a cloth over the bucket to keep bugs out. The seal is only necessary after fermentation is done.

    Just started 5 gal. Wild ferment to be oak barrel aged. 908 + 5 = 913

    My best Cider’s have sat 6-9 months in glass before I kegged or bottled. Right now I have 5 gal. in glass and another 5 in oak I started last fall.

    I think a lot of the wild yeast is from the barn, bins & press. Not necessarily the apple skin.

    That’s strange. Most juice is 1.050-1.060 and 1 pound of honey raises 1 gal. 1.035. Your starting gravity should be a lot higher.
