    Very Long Mash

2 questions for you permo: 1) Why do you mash overnight -- is it solely for the 5% bump or some other reason? 2) Why is 140 the magic temp? I ask b/c this might work great for me. It's always tough to find time to brew with the family (and 2nd daughter on the way.) I could get a...

    Why BIAB?

Well, I think you'll find that the primary attraction of BIAB to a lot of people is less equipment to buy, store, and clean. Probably you're not going to save 2 hours in a brewday unless you normally do a REALLY long fly sparge. But to answer the 2nd question, I have not seen any lack of...

All Grain with only a 3 gallon boil for a 5 gallon batch????

I'd say for all grain you'll find it difficult to have enough water to mash and sparge. No problem if you're doing extract though

Holy crap, my IPA just fermented at 85 F for a day...

Hmm, i did use S-05 so that's a bit of a bright spot. I'm down to 66 now and i'll let it coast there for a while and then nudge back up to 72 for a few days. I ALMOST pitched notty b/c i've got like 8 packs in the freezer, but decided to use my last S-05 instead. May have dodged a bullet!

Holy crap, my IPA just fermented at 85 F for a day...

Man that's not what i wanted to hear. I figure i'll give it 4-5 months and see what i've got then.

Holy crap, my IPA just fermented at 85 F for a day...

It was about 12 hours into fermentation, and i believe it was elevated for about 12 hours.

Holy crap, my IPA just fermented at 85 F for a day...

I just put 3 fermenters in my ferm chamber: IPA, ESB, and a blueberry cyser. Set the temp for 68 on the cyser, which happens to be the furthest fermenter away from my heat source (2 75 watt light bulbs.) Ferm chamber is an insulated box in my 54 degree basement. Temp was spot on 68 on the...

    How to use my kettles?

I would definitely do the mash in the 9. At 1.25 qts/lb the 5 gallon is going to be very tight. Little room for stirring and likely to make a mess if you're not careful. Mash thinner, between 1.5 and 2.0 qts/lb and do it in the 9 gallon. As someone else said, you can then start the boil while...
