    Just talked to the wife and the airlock is bubbling slowly and there's a small amount of foam on top. So, if nothing else, the 099 hasn't gone to sleep yet.

    Well I wasn't sure if us 05 would start up in such a high alcohol/low oxygen environment. Champagne yeast would probably work but the 099 is just as high alcohol tolerant so I stuck with the beer yeast.

    I thought that was a possibility but the beersmith software still shows a 27 SRM beer. That's what's confusing about this. I can't imagine it's a glitch in the program as I haven't had the problem with any beers before or after this one.

    Here's the meat of the recipe. I can't remember the brand of candi sugar I used buy it was definitely dark colored and labeled as such. I believe it was marked 280 SRM.
