    I have the 14 gallon model and love the tri-clamps. Makes it easy to thoroughly clean/sanitize your fermentor, the one piece of equipment where sanitation matters most in the brewing process, IMHO.

    It won't pose a health problem but will probably corrode fairly rapidly.

    Don't think CaCl should improve your efficiency but your yeast should be MUCH more healthy if your water is so low in minerals.

    Correction...I measured it when I got home. Its 4.5x4.5x4.5". Wall thickness is 0.25" so it is 4x4x4" on the inside.

    I used a mono 2.5mm jack and plug I picked up at my local electronics store. Isolated Panel Mount 2.5mm Mono Jack Unicorn Electronics Philmore 2.5mm Stereo Plug I don't think the added metal affects these probes in any way, and the temps still seem to be spot on.
