    DAP vs Feramid K

It's one of Jack Keller's recipes. I'll just copy/paste to make it easier. It will be my first time trying it. I am going to make a few adjustments though. For one, I am not going to use water that hot to mix in my honey. Zingimel (Ginger Mead) 2-1/2 lbs clover honey (you can use...

    Tamarind Mead Recipe Critique

I'll keep that in mind. Tamarind pods are cheap. I was hoping to supplement it with some of my jar of tamarind cooking concentrate that I use for pad thai, but I double checked the label and it has sodium benzoate in it. Granted, I guess it could still add it after fermentation is done if I...

    Tamarind Mead Recipe Critique

I did a little more research and decided to go with Mexican Vanilla beans instead of the Tahitian vanilla extract. Floral doesn't seem like the right flavor profile for the rest of the ingredients. That being the case, do you think I should just add a split bean to the secondary (these...

    Tamarind Mead Recipe Critique

Sorry it's taken me a few days to reply. I've been a bit busy and feeling a bit icky. I wasn't really planning on doing anything that I would consider 'cooking' per se. I just thought that heating the water a little, maybe to 90°, would facilitate the proper melding of the water and honey...

    DAP vs Feramid K

I have a recipe for a Ginger Mead that calls for yeast nutrient, but isn't specific on the type. I'm a totally newbie to brewing so for a recipe that is basically just honey, ginger root, fresh squeezed orange juice and water what would be a better choice, Fermaid K or DAP ?

    Tamarind Mead Recipe Critique

So I stumbled across this recipe posted in a thread by an inactive user. I've only been brewing since August and don't know enough of the chemistry to know how to spot recipes that should work versus ones that may need tweaking. I don't know the rules for when ingredients need extra nutrients...

    Limeade (margarita wine)

So I racked off and back sweetened today. Took a lot more sweetening than expected, but still nice. The flavor is a bit bitey. The lemon/lime flavor is more of a peel flavor than sweetened juice, but that might be since it's so young. Of course this is my first attempt at this and I've only been...

    Limeade (margarita wine)

After reading the thread, I decided to use 2/3 key lime juice and 1/3 lemon juice.

    Limeade (margarita wine)

So after a bit more research I found some info with Sparkolloid's weight and scaled down the manufacturer's instructions (from 1000 gallons). I ended up using 2 teaspoons in 100 ml water (yay for mixing measurement systems. lol) and this is the result after only 9 days.

How many gallons of Mead 2014 Edition!

    IJesusChrist skipped over grolut's 3 gallon post. IJesusChrist's total should be 984.25 +15 = 999.25. Making Kyzaboy89's post 999.25 + 4 = 1003.25. 4 gallons almost missed in two posts on just one page. I'm betting the numbers are off. LOL 1 gallon of JALOM (Lime/Orange) 1003.25 + 1 = 1004.25

    Limeade (margarita wine)

I don't think it's a knock off, I just think it's been bought in bulk and repackaged. It's in a Brewcraft brand package that has the name and the instructions applied with a sticker to the bag.

    Sparkolloid Confusion.

Yeah, good luck with that. LOL Thanks guys. And thanks Jacob_Marley for the extra background info. I was one of those freak children who read encyclopedias for fun. Even if it doesn't come into play anytime soon I like to know the 'why' as well as the 'how.'

    Limeade (margarita wine)

Argh! Why are there so many conflicting instructions for the exact same product?

    Sparkolloid Confusion.

Actually, I already had all the answers to those extra questions you brought up since all those answers agree no matter where you research them, but thanks. When you say the lower rate do you mean the 1 teaspoon of my package instructions or the 1/4 gram from the Mead forum FAQ sticky? Did you...

    Sparkolloid Confusion.

I'm going to be using Sparkolloid for the first time tomorrow and I have a bit of a dilemma. I've been researching off and on for the last few days and have found that the instructions for the Sparkolloid addition stated by the Scott Laboratories' site, my package (re-package it looks like) of...

    Limeade (margarita wine)

Thanks. I will. I'm pretty sure I will be doing the Kmeta/Sorbate/Sparkolloid addition (2nd racking) tomorrow, but I do have a bit of a dilemma though. I've been researching off and on for the last few days and have been finding that the instructions for the Sparkolloid addition stated by the...

    Is Pineapple Mead Truly Possible?

Oh, that definitely sounds interesting. I'll have to ask him if that's a flavor combo he'd be interested in. Heck, I might do it for myself regardless. The answer to my original question seems to be, "Yes, as long as you rack a 'completed' show/traditional mead over some pineapple." I can...

How many gallons of Mead 2014 Edition!

    951.25 + 5 = 956.25 not 955.25 :D Using corrected number. 1 gallon JAOM 1 gallon S'more Mead 956.25 + 2 = 958.25

    Limeade (margarita wine)

Okay, let's try this again. I was three quarters through my post yesterday when my computer blue screened. Grr My very first attempt at anything like this. Only been brewing since August. Just wanted to add my notes for my experience so far. So I started mine on October 4th, all of nine days...
