Is there such a thing as too long a diacetyl rest?

I have a follow-up question on this beer if anyone can help. Since it was kept at d rest for so long and basically fermented out to FG, is there any reason to take a step down approach with temperature or can I just put t in the fridge at 34 degrees right away? My understanding is that...

poured wort on sanitizer solution - HELP!

Dried pineapple? Interesting. Given the current circumstances, how are you planning on sanitizing that? Note: I know nothing about brewing with pineapple, fresh or dried, but the gotmead.com calculator says 3 pounds of fresh pineapple will add about 3 points. 6 pounds of fresh will add about...

poured wort on sanitizer solution - HELP!

If I had a nickel for every time someone told me that phrase... But as for topic, seems as though OP will brew this to the end. Read that low OG was a concern. What about adding some fruit to bump the flavor and add some points?

My son tossed a lego in the beer is it done?

You know, after tasting a beer, I have often thought, "Hmmmm.... needs more lego." Glad to read someone has followed through with experiments in dry lego-ing.

Just made a brown ale - will it be too sweet?

Just a follow-up, bottled this tonight and it tastes really good. It's going to be quite nice once it's properly conditioned. [Edit] And to add that based on the feedback in this thread, I did some research into Mild's a brewed something similar to the recipe in the original post. Milds - never...

    gravity going up?

Just to be clear, you got the funky readings, then racked to secondary on the chips, right?

    Aging Porter

So your grains were crushed, that's good. How long did you guys steep it? And your temp was ~155 degrees ? I see the kit guidelines say a 10-30 minutes steep. With the .5# black, .5# chocolate, and 1# crystal 60L, a 20 minute steep should have given it a dark color regardless of the malt...

    Growler question

Do you have a link or something from NB? Because with the growler that was purchased for me from NB, they clearly told and encrouaged me to carb in the growler I had. (See above post).

    Aging Porter

I've never done this kit, but with a half pound of Black malt and a half pound Chocolate malt, I would imagine a pretty dark porter. 1) Did you crush the grains with a rolling pin? 2) How long did you steep?

    Growler question

Depends on the type of growler. I don't think most growlers are meant for bottle conditioning, but I got a fancy one for Christmas and asked Northern Brewer about it: https://www.homebrewtalk.com/f14/carbing-growler-220997/index3.html#post2593610

Have a copy of the recipe handy? Or at least which kit you used?

5 gallon new oak casks? How to age?

Will do. I'm extremely curious to hear the differences in oak chips versus the cask with the same brew. So you kegged the oak chip version last night. What stage are you at with the cask beer?

holy water, marijuana and mace oh my!

Mace is a spice from the nutmeg tree.

5 gallon new oak casks? How to age?

Did you got from primary to cask to bottle/keg? Also curious where you got your cask. I've seen a few places online, but it would be nice to have a recommendation.

Is there such a thing as too long a diacetyl rest?

If laziness was a sport, I would be professional with multiple championships. But I'm in no hurry with this beer. I'm hoping it'll be ready by late May or early June.

5 gallon new oak casks? How to age?

I'll admit it. I like the novelty of a 5 gallon oak cask. But from what I've read, new ones are too oaky and will overpower a beer. Anyone ever try filling the cask with some rot gut to "age" the cask for a while and lessen the oak bite? I'd like to do it with whiskey for undertones but it...

    Finally a pipeline w/ pic's

Ha! I didn't even notice that. I was too busy looking at the beer. But that's hilarious! For OP: Looks good man. A nice variety. Hope you're able to get a handle on the temps so you get a beer you personally enjoy.

Is there such a thing as too long a diacetyl rest?

I went ahead and tossed it in secondary this evening. SG was at 1.010. Haven't seen any bubbles come out of the airlock, but I can see some minimal movement in the carboy. Smelled pretty good. Oddly enough, I didn't think to taste it. I was kind of surprised at how clear it already was. We'll...

Is there such a thing as too long a diacetyl rest?

Unfortunately, do to some serious life problems that are not relevant to the beer or this thread, this lager is still setting in d rest. So I brewed this on 1/16/11. Brought to d rest on 1/31/11. Now it's 2/19/11. I'm half tempted to just bottle it and try again. 15 days at 58 degrees. 19...

    Question about using dishwasher

I'm kind of a clean freak. If I have to buy new bottles, they go through the dishwasher including a sanitizing cycle. I still rinse them in the sink filled with sanitizer before bottling. After I start drinking my beer, I always rinse after pouring to clean out any sediment. After I have a...
