    No, just leave a lid on to bring it to boil. Once at boil, the lid comes off. Yeah, if you try leaving hte lid on the entire time, you're just asking for trouble.

    Try tightening the spout. I'm assuming it's a screw on - spout on the outside with a nut on the inside. [Edit] Just twist the outside part. Don't put your hand in the bucket.

    A standard cup used for baking, cooking, etc. is 8 ounces. A standard "cup of coffee" is 6 ounces, but can be up to 8 ounces. I went through a whole conversation with my father a while back when he bought a new coffee pot. I don't why it's like that, but it is. A "cup" is not always a "cup".

    Is there such a thing as too long a diacetyl rest?

    Another quick note. I just checked on the carboy and due to the dramatic temperature change from 59 degrees down to 35 degrees, there was some suck back on the airlock. Not a problem since I use whiskey, but something to consider if someone stumbles upon this thread and has water in their airlock.

    I just saw this thread in the yeast forum that might help you. A guy was asking about using saran wrap or foil on his bucket (although for a different reason than you, but the mechanics are still the same). Seems people have done it before and had successful beers.
