    I'm not one to talk, I've moved to dry yeast for most of my recipes calling for neutral yeasts because I don't feel like using a starter.

    I used to do this, but I found it easier to just put the water in at about 10 degrees above strike temp, then wait a couple minutes until the water gets to strike temp. Every cooler needs a different amount for preheating, but you'll figure yours out.

    A slap pack is really still underpitching. If you want to get to a pitching count that's recommended, you need at least 2 packs.

    I agree, you definitely need some caramel type malts in there if you want some sweetness. I would probably do a half pound of caramel 60, I like the mid-range crystal malts in my stouts.

    There's plenty of yeast in there and it cools down quick. Nothing to worry about.

    Cheaper to buy or brew?

    I think it depends on how you do the math. If you're doing all grain, then the cost of the ingredients will be cheaper than buying the same amount of a quality craft beer. But if you are investing in things like brewing systems and kegerators, it's probably a wash in the long run.

    Mac endorsement

    I became a Mac guy a few years ago, and will never go back. But for the people who say they need to run Windows programs - just download Parallels (or another mirroring program), and you can run Windows from a Mac, it only takes about 25 G of your hard drive.
