This Saison is a stubborn brew... ???

Belle yeast, it was probably done 3 days ago.. Looks pretty typical. Those look like yeast rafts, if you gently tap on the side of your carboy you might see some fall. Or just leave it and they'll eventually drop. Those generic instructions kinda suck for the saison, ferment that stuff warm. I...

    Possibly over-bittered

40 grams thats like 1.4 ounces. . I have troubles cooling my wort, it takes my immersion chiller and at a minimum a stay in the fermentation fridge over night to get to pitching temps. I have been a bit more bitter at times, but never crazy bad.. it might not end up exactly as you want, but it...

I don't like doing that, but I do...

Controlling temp in warm water bath

You'll probably be alright.. 4 degrees isnt that bad of a swing. Ive had some wild swings near the end of fermentation without much impact.. I usually have heat problems, but have put a hair dry in my fridge for heat this winter lol.. If you get hooked a mini fridge off craigslist for 30 bucks...

Questions from a biab beginner (cooler mainly)

I started out with a 5 gallon water cooler (actually 2 of them) they were free. What I did was mash then do a second running. That is where #2 the induction cooker came in to play. I'd heat it while The second running sat for a bit, then I'd pour that into the pot that was already close to...
