    The cooling water flow rate must have a lot to do with this, at the rate mine flows out of the hose, it never gets as hot as you described. But then whats really important is how cold the wort is. So as long as that's effective, I don't concern myself with the cooling water change.

    Agree on this, bigger is better when it comes to kettles. you should look for 15 gal. then your set for just about anything. I have a 20 gal and stopped worrying about boil overs, or lack of space for big batches, etc.

    Make sure your stirring thouroughly and everything is mixed well before you take your sample. Sounds like you drew off of the original 3.5 gallons and the top off water wasn't mixed in well. Give it another shot.

    FYI there is info online suggesting connecting a 10uF electrolytic cap between gnd and EN pins on the ESP32 to resolve the waiting for packet header issue.
