Reading the Ruhlman & Polcyn books, I was really surprised that pepperoni is traditionally made from beef NOT pork. All of the commercial (ie grocery store) pep is pork & lots-O-fat.

I was all gun-hoe about getting my conical on casters. I found some stem casters that fit the legs. They looked good ;) and moving was easy. Once I filled the conical, things did not look so good. I removed them. Now it is stationary.

JonW nice setup. Are your fermentors fastened to the riser/carts? I inquired with brewershardware about adding casters. They said they did not sell then because the fermentor is top heavy and could easily tip. If I was going to take the liability they suggested Expandable Stem Swivel Casters.

SS prep table work fine. You can cut down the legs to suit your needs. I use one at 18"x72". Found new on Ebay. I forget the name of the manufacturer. Needless to say it is of Chinese origin. I have not cut the legs down but plan to once I get my exhaust hood fabricated.
