    Yeast in bottles...

Long story short, I lacked secondary space of sufficient size, so went ahead and bottled. I see a layer of sediment forming at the bottom of the bottles, and even though I know I've hit FG, in worried about the yeast affecting flavor long term through autolysis or something else. Any thoughts...

    Show us your Kegerator

I think the need to build your own kegerator tends to follow on with the need to make our own beer, it just makes it so much more worth it. Plus, I have a two tap kegerator just like that one which I built for under half what that costs. Sent from my iPhone using Home Brew

    Cider with wood chips

Just tossed them in! WVMJ: that may be the case, and if so I am glad I soaked them in rum beforehand. Cider doesn't have the flavor to handle significant levels of oak. Too much and you'd be drinking a tree with no other flavor attributes. Sent from my iPhone using Home Brew

    Cider with wood chips

Afraid I didn't measure scientifically, it was about three or four handfuls. Just remembered, after soaking the chips, I let them dry/waft in a brown paper bag for a week (I was told that would avoid imparting a boozy flavor in the cider from the rum), and then left the cider on the chips for...

    Old brewer, new location

Just moved to Birmingham from Athens, GA. Originally from South Africa. Interested in meeting up with some other brewers in the area, maybe discovering a club? Also, if you know any fellow South Africans in the area, I'd love to find out how they have adjusted to the area! Sent from my...

    Cider with wood chips

Just my experience: I brewed a 6 gallon batch of cider bumped up to 10.5% with maple syrup. I toasted my own oak chips in the oven, soaked them in dark rum and added them after fermentation was done. Cider turned out beautifully. We kicked the keg in a day even though there were many other...

    Step Feeding vs SNA

Hi guys, about to venture into my first mead, I'm trying a 1 gallon version of this guy. Question: I'm having trouble deciding between step feeding the honey as described in the recipe, or just adding it all at the beginning and then staggering the nutrient additions along with aeration. I've...

    1 Gallon Cider Experiments

Well, unfortunately my coffee cider experiments are halted for the moment, life got in the way and my cider developed some mold! I didn't want to mess with it, so I just dumped it :(. Moving to Alabama in about two weeks, so all brewing is completely stopped until settled. I do however have...
