Thanks all for the great ideas on using false bottoms/bags. Any special method to bend the heating element without damaging? Would like to do this with mine so I can brew 5gal batches with my old BIAB bag and a false bottom.

Do you use any float switch on your pump to make sure your element doesn't get exposed? I had one of my first batches ruined because the mash colander wasn't draining fast enough. Is the false bottom just more reliable?

I ferment in Fido jars (they burp, so no need for air locks). I've stored in the Fido jars for ~6 months in my basement after fermentation hit the sourness I like. I've had no issues, probably because limited oxygen gets into the jars and low PH environment. Works for pickles as well

I use RO in my BIAC and have ended up within 0.1 ph of the prediction from Bru'n Water for all of my batches (7 so far). Just make sure you put in the correct water volumn and you should be fine.
