    I'm going to agree with kal, with the one exception of Belgians, which are often high abv, highly carbonated, with huge rocky heads.

    As for the yeast I think you would be ok with a high gravity ale yeast WLP500 or WLP510. As for CO2, for a barley your going to want low carbonation, I'd go for 3/4 oz per gallon.

    Given that heat is needed as an activator, unless your just going for flavor, dry hopping wouldn't work. If I were to run suck an experiment I would say stick it in a hop back. My concern at that point is what fermentation would take out of it.

    Thanks for the info, it definitely helps. I didn't realize that the 12.5 had a double gasket to seal the lid. I'm leaning more and more towards the 14.5, it just seems like a better more secure design.
