    I just made an English IPA with 2# honey. I added mine as soon as the krausen began to die down, 4-5 days in. I mixed it into a little warm water to make it easier to pour, but that probably isn't necessary. I've read that heating honey changes flavors, and honey naturally doesn't carry any...

    For me, Hevelius Kaper and Warka Strong during a semester abroad in Poland. But back in the states, it was back to BMC. Then a couple years ago I started drinking beer from O'dell and that is what made me swear off BMC for good. Well, mostly. I still tip one back on rare occasions.

    So I've just poured a glass after work and I am pleased! No head at all, but nice sharp carbonation. Hopefully it will develop a bit more in the next week. Great "green" aroma.     yeast dilemma

    So I pitched the entire 2L starter and by the next morning there was fierce activity, so the yeast was good! In fact, good thing I used a blow off tube. Missed my OG though, because I was sloppy about my boil volume. On the positive side, I'll have extra beer!

    yeast dilemma

    The yeast packs were not cold, even though NB ships with ice packs, but the yeast packs weren't swollen either like some that i have received in hot weather. I'm going to give it a shot, worst that could happen is that I have to repitch right? I'll let you know how this turns out.
