Didn't read all the answers as some were long. However I highly recommend a spike 10 gallon brewing kettle. Probably the single best piece of equipment I own. Get a good fryer that puts out a lot of btu's. I use two 10 gallon coolers for a HLT and Mashtun. I also highly recommend a wort chiller...

You can always take a sample and send it in to white labs. They will analyze the beer and tell you everything that's in it. They charge 30 bucks so I would only sample if your worried.

I use almost the same set up. Just with a pond pump and two coolers. I use the collected hot water for cleaning. And after the first few gallons of water I take the hot water tube put it in my ice cooler to recirculate and save water.

My spikes kettle said it didn't need to be cleaned. They ship it clean. I still rinsed it out and after the brew day I used pbw to clean it and a soft cloth to wipe it down. Pbw with hot water works wonders
