    New Belgium - what is that distinct flavor?!

    I believe it's honey malt. I had one of there pale ale's (something about a dog that died on the bottle) that specifically stated it used LOTS of honey malt. The nutty New Belgium flavor was particularly strong in that beer.

    UPDATE: My keg of Sticke Alt blew yesterday, so I threw this beer on in it's place. The aroma is great, the taste is very Pliny-esque, and it recieved a great review from a brewing buddy who enjoys craft beer but has not yet had the privelege to taste the real deal. We'll see how it lasts...

    I don't know if any of your local HB shops carry Wyeast, but their German Ale yeast is year-round and (I've read) the same strain as WL037.

    Plastic bags for lining inside homer buckets (Bulk Grain Storage)

    Pale Ale for hop trials??

    Sounds good. I think you'll almost always make good beer with that grain. FWIW, when I'm trying to let the hops shine I like to use Crystal 40L or 15L rather than the 60L just to give the beer some sweetness and head retention while avoiding the caramel I get with the 60L.
