Looking for a DFH 90 minute clone.. but not really.

I've got a DFH 90 Minute Clone fermenting now; I will be moving to secondary and dry-hopping it this weekend. Original source is from BYO. I split my hop additions into 9 parts, which were added every 10 minutes for ease.. Dogfish Head 90 Minute IPA A ProMash Recipe Report Recipe...

Brewing Saturday, too late for a yeast starter?

I've made starters about 8 hours in advance and never had a problem. When I do this (not ideal - usually I let my starters go 3-4 days) I'll add 1tsp. of yeast nutrient to the starter. Keep an eye on it though, it can get very vigorous! When harvesting yeast from a bottle of commercial...

Maybe the worst ever..... (label removal)

Two Brothers is worst for me. Same thing, some sort of vinyl/plastic thing. I don't even bother trying to remove them, it's not worth the effort. They go straight to the recycling bin. Oxyclean soak overnight removes all these labels no problem: Sam Adams New Belgium Dogfish Head Darkhorse...

    2nd batch carb probs

Also, make sure you are adding your priming sugar by weight, not volume (although I believe you are correct - 3/4 cup would be about 4oz by weight) Four ounces by volume is only a half a cup. But yeah, I would crack a bottle at 6 weeks on that one.

First blow-off w/ pictures! (just for fun)

I have a blow-off every single time I brew; am I the only one?

    Thoughts on Sam Adams...

I thoroughly enjoy their Winter Lager. IMHO, it's much better than Goose Island's Mild Winter. Also, the price around here (Chicago area) of Sam Adams is cheap. They sell 24 packs of their "Winter Packs" at Sam's Club for about $22.

    I get it now!

Totally agree. When homebrew or good beer isn't on hand, or if the occasion calls for it, Coors Light is my go to beer. Usually when I'm watching football, etc. I can drink lots of em, control my buzz more easily and it really is less filling. I can't imagine sitting through a game drinking...

    Any Darkhorse clones?

I've recently consumed a lot of Darkhorse Brewery beers; anyone have any clone recipes? I am most interested in their Sapient Trip Ale (a dark Tripel) or Scotty Karate (lightly smoked Scotch Ale.) Both are delicious, I'm not sure how widely these are distributed though. They are in Michigan...

    STONE bottle label removal.

Anyone have a way to get Two Brother's labels off? Dunno what they use, but they are the only ones I can't get off using Oxyclean or Star-san. I've just been recycling them.

    Avoid certain bottles?

I've only had problems with Warsteiner and Woodchuck cider bottles. Dunno why, but my capper just doesn't seem to like them.

Have you brewed on and off, year / multiyear gaps..?

Yeah, I seem to lose interest in hobbies every year or so, but eventually they make a reappearance and I am back in them full speed. I took about 2 years off before this summer.

A beginning brewers dissertation...reinventing the wheel, impatience, and overdrafts.

I think you need to add "excellent writer" to the list. I started out the same way, and now I have lots of equipment I no longer use. Now I use Denny Conn's batch sparge setup (which cost me about $25 to build) and it makes the best beer I've ever made. Live and learn, I guess. Great read.

    Which Chiller would you Choose?

My issue with CFCs are that I can't see the inside, so I can never be 100% certain it's clean. Sure, the hot wort should sanitize it, but I like to be able to see, so I use an IC. I own both for some reason though...

Sanitation - How do people really do this in practice?

I mix a five gallon batch of Star-San in a bucket for each brew. Keep in mind that you don't really need anything sanitized until after the boil. That doesn't mean it shouldn't be clean though. After the boil, anything that needs sanitized goes straight into the bucket. Make sure you push...

    Beer Judging Rant

+1. In my experience entering competitions with non BJCP judges/inexperienced brewers/general populous, a friggin IPA _ALWAYS_ wins. I guess it's because it will stand out on the taste buds, even after drinking 15 other types of beers.
