Man, I love white gas stoves and lanterns. I have propane stuff too, but for pure btu’s, white gas rules. Iirc this model is from the mid ‘60’s and it lights up within a min and purrs like a kitten.

    Who's smoking meat this weekend?

I love my smoker and smoked meats. However, for the big game, I have to go with traditional buffalo wings. I’ll get out my camp stove and fry them on the patio. It’s a small mess to deal with after but worth it.

What did I cook this weekend.....

Jus vac sealed 3lbs of Tillamook pepper jack and cheddar. It’s my first time smoking cheese. According to what I’ve read, when it’s first smoked it smells like an ashtray- yup. It’s supposed to mellow for about a month before it can be eaten. So now I wait…

Maybe you could double bag it. On the second bag, don't vacuum. Oh man, I can see a few tests in my future.

Poll: Do you have, or plan to get, an electric car?

This is interesting. We are considering putting solar panels on our house and have had a couple of zoom meetings with solar reps. I specifically asked one of the companies to include a power wall in the estimate. The consultant said she would recommend putting that money towards an ev and...

    Extra Minty Chocolate Stout

The following recipe is an extra minty chocolate stout that I’ve tweaked a bit and am now very pleased with the results. The base recipe is from Mosher’s Radical Brewing with a few significant changes. You could use your favorite stout base and come up with good results. Use this recipe as a...

White stuff on top of the carboy

Taste it. It could be malolactic fermentation. In which case, your cider is fine. If it were my batch, I’d dose it with metabisulfite as cheap insurance. If it tastes just slightly funky, heat pasteurize and blend it with a clean cider. You may end up with a delicious cider. Some of my best...

    Hi I'm new!

Welcome to HBT! Apple cyser is what got me hooked to mead making years ago. We bottled our batch and would occasionally pop one open to share. After about 15-18 months we opened a bottle and wow. When I took the first sip it was flavorful and had body to it. I remember thinking, this isn’t bad...

    Backsweetening to balance acidity.

Another thing to consider is using tannins. You can get them a package of tannin powder at any lhbs. When using sharps, it’s pretty common to use something tannic. That could be oak chips or the easy route is powdered tannins. A little goes a long way. When I was using mainly store bought aj...
