    All Grain with only a 3 gallon boil for a 5 gallon batch????

    Why don't you just do a smaller batch? You don't need to do 5 gallons. Just adjust the recipe.

    I'm pretty sure you can put a lid on it until it comes to a boil, then take the lid off. It should keep it close to the boil temp at that point.
