    Choc Wheat Malt instead of Choc malt

    I made a clone of Founder's breakfast stout with chocolate and coffee and had no problem with head retention without the chocolate wheat. Make sure you use a good bakers/dark chocolate it helps to reduce some of the oil.

    Adding Bitterness after Boil

    The hop shot may work in this case if you are only looking for 6IBU, but I don't recommend it. It is designed more for a flavor aroma addition. I boiled mine with my priming sugar trying to get more bitterness out of it, but didn't get anything to noticeable.

    OK I have an update. What I did was to boil my priming sugar in 1 gal of water. This boiled down to about 4 cup to go into my 10 gal batch.     Never Use Pbw Again!!

    Anyone know if oxyclean (after diluted in water) is safe to dump in the lawn. I brew outside away from any actual drain and usualy drain my water in the back lot. Then cleaning is done in the kitchen. I would be nice to be able to do it in place assuming it wouldn't kill the grass.

Denny do you use s23 much at the 60-62 temp or do you pretty much avoid using it. Logic would tell me...

    Thanks for all the replies. That is what is great about this board, plenty of people willing to share. Also I read of someone who just scooped out 2 cups of wort after it had cooled to about 70 F to use for rehydrating. Is there any merit to this?
