    Yeast question

    Different yeast release different byproducts from fermentation. There are some Basic Brewing podcasts on this topic. They made bread with brewing yeast, and beer with bread yeast. Both came out well.

    First, on your chillers, what size tubing and how long are they? Secondly, if you froze one chiller, do you mean water inside of it? That could slow down your water flow... longer cooling time. Next time, hook one chiller up in a bucket of ice water, and the other in your wort. Then your tap...

    Used wrong yeast

    You won't have the classic German Wheat flavor... the banana/clove like lithy said, and it will probably be much drier, as notty can attenuate pretty far. My money is that you'll still have a good beer on your hands....

    Kegging - funny taste

    When I don't draw a beer for few days, the beer in the line gets stale. I usually pull a half pint or so, dump it, and continue imbibing.

    Just to show how well this beer cleans up, this is 16 days in primary, WLP001 yeast. Just 2 teaspoons of irish moss in the boil. I think doing 90 minute boils will help beer clear up better, and I think you get a better flavor... cleaner, per se.
