    Just a reminder of not to pour left over down the drain if you have a septic tank. It kills bacteria, even the ones in the tank. I use it my self and if the beer was good enough to place in a competition, then it should work for you.

    What are you drinking now?

    Stuck in a hotel room and polished off a bottle of Cuvee Euphorique, wild blue lager, Dundee Wheat and a Dundee IPA. Will be going to bed soon, speel cheek sucks when drunckt.

    My Apfelwein Tastes...Vurpy

    I did my first batch and it tastes pretty good, I did almost the same. Except, I added 2lbs of dark brown sugar 2 lbs of corn sugar, 2oz of lactose and used lavlin 1118 champagne yeast. Mine is about 12.5 and just getting to about 3 weeks in bottles, nice small bubbles and tastes great.

    Did you take a gravity reading before you added the extra DME? You have to remember that your yeast has been working really hard at eating away at the sugars in the beer and your gravity will lower with that. If you measured before you added and then after, you would have seen a jump with...

    I soak mine, give a swirl with a bottle brush for good measure and then sanitize.

    How much vanilla for a vanilla porter?

    I used 1.75 oz in secondary for my Vanilla Cream Ale. I would add a little in secondary and see where you get. That should be enough to determine on how much more you may want to add. If you do to much in the begining, you can not take it out and then your stuck with it. Got to love the nilla!

    How often do you brew?

    I brew about every 2-3 weeks, I am trying for Turkey Day Weekend, just enough time in primary and transfer before I go on travel for 2 weeks.

    Just a small note about yeast, IT MAKES A BIG DIFFERENCE!! It all depends on what type of yeast you use!
