    Did you check your gravity readings with your trusty hydrometer? If not no don't pitch yeast. Check readings first. I'd leave it for at least 2 wks first then start checking gravity readings.

    Dark tower reference? Um the way your fg dropped to 1.03 could be that you picked up an infection. Hence the sour taste. The closed container sample I don't know..a mineral taste after using bottled water? Hmmmm. Perhaps it's a green taste from the beer being too young? There is a good thread...

    I like it man I think the only thing I'd do different is prob the hops. But i think it looks good. Just taste when its done fermenting to see if it needs anything more. Update us on how it comes out. Pics or what not. Hell send one to us at homebrewersreview and we"ll do a video review on it ;)...

    5?! Wow $$$. I love hops and the more the merrier must have been an expensive brew unless you didn't add any at 10 and 5. I think the most I've added a 00 is 2.

    Hey thanks for the reply I will try this in one of my ipa variations and do a review on it on my YouTube channel. Does letting your wert sit that long say a 30 min or even an hour before chilling at 180 pose an issue off flavors ect...again good info thanks.

    Never tried a hop stand. does this method provide more bitterness? Aroma? Or both? For the finished product. Also cause I'm wondering if I don't dry hop and just doing a hop stand be as effective as dry hopping?

    Holy cloves batman!!!! I'd say ease up and add to tastes like mentioned above cloves will ruin this beer if you're not careful! Add to taste cause once its in the beer you can really fix it where as if you add too little you can always add more

    20 to 30 min is ok but if you can find a way to cool it faster would be best. As for aroma nothing works better than dry hopping. Take 1-2 oz pellet or whole leaf hops and put them in the beer after beer is finished fermentation and cleaning up about 3wks normally. Then dry hop it for one week.

    My process. I put tin foil over the lid on my bucket or Carboy and stick it in the fridge for 3 day to a week.
