    I'm sure it's fine. You might even be at fg already at 7 days. I've had krausen for 12 days A few times and it was finished. Check gravity levels for a few days and see where you're at.

    Did you scorch the extract? It could be you just have a stronger beer due to Volume loss. What's was your calculated ABV? Might be worth letting them sit for a bit if time usually heals all.

    I'd do 1lbs of 20 or 40. Dump the rest. You have 8lbs of DME. It's going to be a big ipa. Hops look great. But ya everything looks fine.

    I agree with the grain bill. Seems like all you would need is say a pound of a crystal 20 or 40. But hey man it's your beer. You made/created this recipe. Brew it up take notes and have fun. Thats the best part of home brewing. Take pics and keep us updated. Cheeeers!

    Fermentation a lot of the time finishes in 3 to 4 days. Sounds like its all good. Agree on leaving it for a bit. Notty rips through sugar like nobodies business so that's normal.

    I'd treat it like an experiment at this point. I'd pitch let it ferment and see what it smells and tastes like.     First "whipped together" recipe

    1 oz Columbus packs a punch. If you're looking for a less bitter beer might want to lighten the amount. I for one like bitter so this recipe looks good to me :)
