Sounds like a good recipe. I thought I'd usually seen suggestions of 1 lb fruit per gallon. How "fruity" does this come out?

Like other responses mention, Star San is a sanitizer only and not a cleaner. You need to clean and then follow it up with sanitizing. I use Oxi-Clean Free (no perfumes or dyes) to clean my gear.

I wouldn't worry too much just yet. Some people claim to see signs of fermentation hours after pitching yeast. In my experience though I usually see something 16-24 hours after.

Sorry I don't have any advice to offer regarding the Anvil or Sovereign. I own a 10 gallon brew kettle from Ss and love it. I'm already planning on getting one of their fermenters in the future here. You could always wait for a sale. Weren't they like $30-$50 off around Black Friday last year...

Welcome to HBT! This is a great place to soak up some knowledge and ask questions. My only piece of advice would be to remember that you can do a lot of different stuff with a fairly basic setup. Don't feel pressured to upgrade everything!
