It's a lighter Crystal. According to Liefman's website, Goudenband is all Pilsener and Caramel malts. I use Pilsener, Caravienne and Caramunich in my Tripel

Either one will work fine. I used Sodium Metabisulfite. You should be able to get it, it's packed in Portland (Isn't Brewcraft formerly Steinbart's?).
