    Perfect, thanks for the reply! That seems counter intuitive. I mean, "distilled" sounds like it's really pure, whereas "drinking" sounds like...well, drinking water. The distilled is good to mix up with star San, so no loss anyway.

    I just tried one of the beers, and it was pretty good. I know it isn't done conditioning yet, but the flavor and carbonation were nice. I think a couple more weeks in the bottles and I'll have a great beer!

    I can't seem to find RO water. All I can find is Distilled (steam distilled) and Drinking (microfiltered). Thoughts?

    Pardon my ignorance, but unless I misread something it looks like you pour the hot wort into the primary without first cooling it. Am I correct, or did I miss that info?     You're right, that's not bad. It seems like the same debate with SS vs copper chillers exists as the one between SS and aluminum pots. I understand that copper transfers heat better, but to what extent is where I'm unclear.
