    Exploding bottles!?

    You could put the rest in the fridge, I would put them in 12 pack boxes too if you have them. Also I think its a good idea to take a gravity sampling over 3 or 4 days to make sure it does not change and it is totally done fermenting.

    Why all grain?

    I like AG because i am into learning the great brewing traditions that go back thousands of years, they did not have malt extract in ancient Egypt.... That being said if i am short on time or just want to brew in my kitchen I will do extract. It makes great beer too.

    No mash out - low efficiency

    Sounds fun, I set up a blow off for the first time on a heffe. It was a little disappointing not to see all kinds of beer foaming out of the tube.

    36 Quart Bayou Classic - How do I add two holes?

    Anyone used the step drill that bargain fittings sells? I was thinking of buying one in a month or so for my kettle build. I have used them before when I did my mashtun, great service.

    Cool I just finished a Honey Kolsch, i vow to fridge a couple 22's for at least 2 weeks..... So far my carb level has been good, but I am always looking for ways to improve.:tank:

    I think it's 1 week in primary, 2 weeks in secondary, and 3 weeks in the bottle. I usually do 2 or 3 weeks primary, 2 or 3 weeks secondary and 3 weeks bottle conditioning. :mug:

    Gotta try the 2 week fridge thing, mine are always gone after a day in the fridge. I try to conserve by keeping them in my cellar, but allot of times I just end up putting them in the freezer for 20 minutes and drinking....

    I just finished a porter extract w/specialty grains. At 2 weeks in the bottle it was OK but had a kind of sweet soda pop thing going. I waited another 2 weeks and its AWESOME. It does seem like dark beers take longer to condition, my pale ale was ready sooner.

    All Grain-- Strike and Sparge water amounts?

    I start with around 7 gallons (3 gal mash in , 4 gal sparge), I know I am going to loose a gallon to boil off and a gallon to grain absorption. After the boil I will have right around 5 gal. Like others have said it will very a little depending on your set up.

    Nice! that stout looks tasty, Just finished my first AG as well. It was a long brew day but tons of fun and I can't wait to fire up the mash tun again....

    I am curious myself to hear some user reviews of those kettles. They seem like a good price and they look cool ... Has anyone used any of his kettles that can chime in with a quick review??
