    IMHO I'd stick with the Lallemand Belgian Wit. Definitely would need cooling. I used a swamp cooler for a few years when I started. Add some frozen water bottles to the swamp cooler. Swap them out as needed. Also wrap the cooler in a blanket. Just be sure to not restrict the operation of the...

    I had a similar problem. I had the water report for my area but the makeup changed dramatically depending on rainfall. I gave up trying and switched to distilled water, as others here do, or you could use RO water to start with a clean slate.

    Hello all.

    Used to use the priming tablets. One tablet per 12oz bottle. Switched to a bottling bucket and priming solution mixed with the beer. So much easier, IMHO. Any specific questions? Someone here will answer. Lots of experienced brewers here willing to help. BTW, welcome to HBT.
