    Using water jugs as carboys?

    I use to work at a winery where we would ferment in 55 gallon plastic pickle barrels. The plastic was food grade and was fine to re-use after fermentation provided you properly cleaned and sanitized.     Worse things than mice making into the fermenters of big winemaking companies (anything under $10 a bottle). Extra clean and sanitize, you'll be fine, no use wasting the glass.

    Anyone else drink Carlo Rossi for the gallon jugs?

    Look around where you live for umm, low class Italian Restaurants. I found one around me that only poured Carlo Rossi wines by the glass and they would save me all of their empties. They would only go through maybe one or two a week, but that adds up in your collection over time.

    Hoping to get some info from people who have worked in the brewing industry

    Additionally, find out if there is a local brewery around, if there is, go volunteer. You'll know right away if you really want to be crawling around in 120* boilers with scrub pads and stainless steel cleaners (some reason I find this fun).

    Liability waivers don't mean anything. You need to file paperwork with the Secretary of State setting yourself up as a limited liability company (LLC). Attorney can do this quick and cheap. Call your local bar association.
