    Jakemo's Centennial Single-Hop IPA

After being refrigerated for a number of weeks, this beer ended up being a delicious pale ale. Not quite IPA but very tasty nonetheless. I'm definitely learning the value of cold-conditioning through these single hop beers!

Saison with spices and apricot puree? Ideas?

Been in bottle for a couple months now, tasting awesome! Bottled at 1.010. Would like to ferment a little warner from the get-go next time. Wouldn't mind more year flavor. FW saaz gave a delicious flavor to this one.

Any recommendations on how to fix "Acetaldehyde" taste

If you're going to be tempted to drink or share it, pull it out... You'll keep being secretly bummed that it has that flavor until the flavor disappears. It should only take a couple weeks to fade...

    Brew Pot

You can get a 5-gal stoneware enameled pot from Wally World for about $25. It's what I've been using since I started, and I'm probably going to get a 2nd soon.

Any recommendations on how to fix "Acetaldehyde" taste

RDWHAHB ;) I'm sure you were expecting that... How noticeable is the green apple taste? I had a beer that took about a month (at least) in bottle before the green apple left...that was after 3 weeks fermenting.

    Double Chocolate stout recipe help

Adding another pound or two of 2-row will give you a good excuse to try partial mash. You might get another 5-10 points in OG too, but I still wouldn't recommend 158... Maybe 155 or 156, at least until you get used to partial mashing. Have fun with your new gear and let us know how this turns out!

    Double Chocolate stout recipe help

Looks like you're just steeping the grains and not actually mashing, right? You're going to get about 90-99% of your fermentables from the LME; changing the temp of the steep will only have a very small effect on the finished product. That said, I made a stout using mostly LME and DME, and...

    Smoke Porter mouth feel help

+1. Totally missed the volumes of CO2 but yeah that's awful high. I used about 1/3 cup dextrose (before i had a scale) on a porter that finished about where yours is, and the low carbonate actually helped give it an apparent creaminess and body that it probably would've lost had I carbed higher...

    Smoke Porter mouth feel help

From your measurements it looks as though it mashed ok... Don't quote me on this cuz I'm not 100% but I fear that you're not getting good conversion of all the grains. That could be responsible for the light FG, but I might also be talking out of my (rhymes with cask). 154 is good, but I don't...

    Repugnant Imperial Stout - thoughts?

Changed the name and finalized the recipe, brewed this past weekend. "Repugnant Unperial Stout" Unperial: all the character of an Imperial, without the booze. 5# light LME 2# 2-row 10oz Flaked Oats 8oz Crystal 120 8oz Chocolate Malt 8oz Belgian Special B 8oz CaraBrown 8oz Midnight Wheat 8oz...

    Repugnant Imperial Stout - thoughts?

Ahh... Makes sense, I was just using the basic hop schedule of an Old Rasputin clone. I'll adjust for just flavor and bitterness... Thanks!

    Spilled beer: what happened?

I'm interested in this as well being that I'm going to Germany this winter and had planned on taking homebrew with me....

    Anybody else have thoughts?

    Repugnant Imperial Stout - thoughts?

Thought about the vanilla beans, but I have some super high quality organic vanilla extract to use first. When you soak beans in vodka, what's being extracted is the "vanillin." The concentration of the vanillin is what makes a good extract :) But trust me, as soon as I'm out, I'm gonna make some!

Is it just guaranteed to be so good that nobody has any input? ;)

    Deluge IPA

Hahah oops! I totally meant to write Cascade... Sounds pretty good! More like a British-style, huh? Yum.
