    How tall are your ceilings in that room? Looks like a great project but I'm not sure I would have the vertical space to build a hood then add the condenser to the top of it.

    Nice build! This might be a dumb question but how are you planning on tuning your PID loop? I was thinking about doing something similar but I couldn't decide if it would be worth the time to write some auto-tuning code or if I should just manually tune the loop. Just looking for other opinions.

    I put mine in a grain bag and added them at flame-out then I moved the bag to primary after transferring the wort. It turned out pretty well but was a little strong on the lemongrass flavor. If I did it again I would make sure I could get the bag out after 3 or 4 days.

    Thanks, I actually just read the post on your turbid mash lambic. I wish I could do that but I will be moving soon and I don't want to disturb the beer while it ages. I guess I'll be brewing a lot of hefeweizens and wits for a while. Thanks again for the info!

    I just came into possession of a huge amount (~200#) of hard white wheat. I know that it is called for in traditional lambics but I was wondering if I could use this to replace any non malted wheat (flaked or torrified)? Any suggestions are appreciated :mug:
