Milk Oatmeal Stout - FG 1.034 - no sign of fermentation for 5 days.

Ok, pitched an 11g packet of Nottingham this evening. Hopefully this will be enough to drop it by a point. It's not visibly doing anything yet. Of course, it's only been a few hours though. I'll let it ride for a few days and do another reading.

    Sierra Nevada Pale Ale "Hoppiness"

That is exactly what I was thinking. The whole point of the high level of hops was to preserve the beer for the boat trip from the UK to India (generally months).

Milk Oatmeal Stout - FG 1.034 - no sign of fermentation for 5 days.

Ok, as of this morning, no change. I have some Nottingham on the way. Should I pitch a packet of Nottingham, or would I be better off getting another vial of WLP002? I really just want to drop the FG by about a point, maybe a little less (considering my use of lactose). On a side note...

    OG and FG

Ok, so without a recipe it's tough to tell (for me at least). Maybe some of the more experienced brewers here can give you a ball park. I lived just North of Houston in Montgomery for several years and used to just refer to it as the "Houston Area", so when I saw your location it kinda...

How many FG points does priming sugar generally add?

It will carb fine in the mid 60s, just take a little longer. However, it will generally be smoother and more clear by conditioning at a lower temp. What I've done is condition at about 68 for a few weeks, then cold condition in the fridge for 3-5 days and it's worked quite well.

    OG and FG

What was your recipe? Your OG post boil is going to depend on how much sugars were added to the wort. On a side note, where in the "Houston area" are you?

    Brewing day sanitation question

The reason I ask is that I recently had a couple of beers (not the whole batch) open with a slight medicinal aroma. From talking to a few folks in my homebrew club, one cause of this can be cleaner residue in the bottle. However, from the research I've done, it seems that is only from bleach...

    Brewing day sanitation question

Just out of curiosity, why do you stress this? What will it do to the beer if you don't rinse thoroughly?

90 shilling recipe help needed - (Odell clone)

ODell's 90/- isn't really a 90 /-. It's kind of disappointing if you have ever had a real 90/-. That being said, it is a very good American Amber. I don't know if it rivals Fat Tire, but it's right up there. I brewed a Scottish Ale that was billed as being quite close to 90/-, but I...

    Brewing day sanitation question

StarSan also breaks down into compounds that actually are good for the yeast as well. So you can sanitize and rack right onto the bubbles. I agree with the other posters, StarSan is THE WAY to go.

    Designing Dark Hoppy Ales

I would start with a brown ale, as they tend to be smooth, malty and nutty. I think that would make a good offset to the hop bite and flavor. I think the dark malts in the robust porter would be a little too bitter (for lack of a better term) to make a good offset for the hop bite, same with a...

    It's Saturday, who is brewing?!

Meh....would be brewing if my Oatmeal Milk Stout wasn't stuck at 1.034. I really need to get another couple of carboys.

    Guinness in a can question

Hmmm....that sounds good. I just bought a Young's DCS in a bottle and it didn't have the widget :(

    Guinness in a can question

The widget is a nitrogen capsule. When you crack the beer open, it releases the gas into the beer. That is how they get the draft consistency.

    Join the club!

I have to agree with Thor. I went to my first homebrew club meeting last night. I was a bit nervous and didn't know what to expect, but I was pleasantly surprised by the warm greetings I received. The club asks that everyone bring a few beers for the tasting, so I went ahead and brought a...

    Sponsored by a brewery?

Do you have any brewpubs and/or homebrew clubs in your area? If so, they would probably be your best source of info. Also, check out the AHA web site: Welcome to the Brewers Association.

    Sponsored by a brewery?

Remilard is correct. We discussed this at our local homebrew club meeting last night. One of our members is a commercial brewer and he agreed to sponsor someone for the gabf ProAm. The requirement is threefold, the beer has to have won at an AHA sanctioned competition, has to be brewed by an...

Anybody else not a big fan of highly hopped beers?

Hoppy beers seem to be all the rage. I think some people go overboard with it. I have a friend who drinks the hoppiest beers he can find and is quite proud of it. I just have to shake my head. It's almost like buying a hoppier beer is a status symbol. Having a Stone ABA or what ever in your...

5 gall carboy for a 5 gallon batch?

I concur. I've used a 5 gallon for all of my 5 gallon batches as well.
