    Hmmm....those look interesting. Especially the Red Dot. Are you going to mash, or go for extracts for the additional fermentables? I'm still trying to figure out what I want to do. Part of me wants to go with an Indian Red type beer and the other part of me wants to add some molasses...

    Regarding instructions, I would highly recommend you read How to Brew - By John Palmer. He has great information for all levels of brewing, including a simple extract kit. You can read the entire first edition online for free. I usually have it up on my computer for reference while I'm brewing.

    Ah, ok, I stand corrected then. :) I have looked at their kits, but missed the distinction. So maybe the AHS mini-mash kits aren't the best for a beginner? At least until they understand the difference between mashing and steeping.

    Ah, good point on the stressed yeast. On the flip side though, at least according to Palmer, (How to Brew - By John Palmer), if you add too much yeast, you run the risk of producing fusel alcohols. My question then is, how much is too much?
