    Yeast can be pretty moody alright. I've had one of my brews go so fast, that between visual checks, I actually missed seeing any activity.

    I used a Wyeast smack. It didn't start slow, but it wasn't fast either - just steady. I had a blowoff after 36 hours that lasted at least 24 hours. I'm at a loss myself - I've never experience activity for this period of time.

    Same here. Palmer gave me all I needed for all-grain. "The Joy of Homebrewing" is good, but Palmer's stuff is much more straight forward and practical.

    I used the liquid extract this time, and what normally would be a fairly light amber beer turned out to be dark amber. I'm off to doing all grain for a while though.
