My LHBS told me the same about 1 day for each month past... but I do starters now. I've had problems with smak packs in the past.

Keep in mind that this is only my second cider. Ok what I did was put all my juice into a pot and took an OG (1.050) then added the concentrate to get it up to 1.060. With my concentrate each can added about .002 to the OG.

It could be done but I wouldn't do it. Just fill the syphon hose with preboiled warter put your finger over one end and the other in the beer. Start the syphon. When all the warter is gone from the hose then start collecting the beer.

Its the ABV thats going to make it harsh not the yeast. Less ABV, less harsh. With that said, the higher the ABV the more time that it will need to age and mellow out. Over time it will become more user friendly. I just finished a batch and this is what I did... 5.5 gal juice 4 12 oz cans...

gonna agree...dont ever throw out before asking!! beer is super forgiving and it takes alot to completely ruin it!!! next time you'll know!

Try the wyeast 1056 it worked good for us. We used it in "Pansy's Pale Ale". The beer was called a Lagernot in the recipe.

ok i've decided to go with champagne yeast for this one and save the distillers yeast for a later cider...how much concentrate should i add to ensure some apple flavor with a higher alcohol content than just 4-5%? im looking at least 8-10% i am going to get a yeast starter going tomorrow and...

so what you are saying is the 5 cans sound good however i should only add 2 at the start then introduce the others one a day for 3 days? i was thinking the same thing about the yeast.. and i have pretty much decided to go with the champagne yeast... thanks for the input!

if your any where around rocky mount nc i might could cut it for you. i have a plasma cutter at work. i would be happy to see if i could use it one sat.

i have a 15.5 keg and i plan on cutting it out with a plasma cutter. the hole size that im going to use is 12 in. and then get a lid from wall mart. cut your hole a little small and grind/sand to fit the lid.
