    On Cloning Bissell Brothers Swish

That's a butt load of late hops isn't it!?

Oxidation in 12oz bottles but not 22oz. Why

I believe less likely because the beer will already be carbed in the keg. Ever heard the saying 'cap on foam', they are talking about capping on top of the foam produced from the fill with a beer gun from a keg. The foam is CO2 and is pushing out O2. And when you cap on foam you're trapping some...

Mash pH and boil kettle pH for hoppy beers

How many times have you tried a mash pH in the 4.8-5.1 range? How did it work? Just to confirm, is that room temp pH or measured straight from the mash? That does seem excessively low. I would have to use more lactic acid than usual to lower the pH and would worry about it effecting flavor...

    Carbonation causing color change?

Personally I have found carbing to 2.5 vol or higher didn't work great for bottle conditioned beer. But that could just be me. I like freisste's idea to wait a little longer. I think you might start to see a difference. But am still baffled that the short ones aren't darkening faster/at all...

    Carbonation causing color change?

How old are the beers? You said they both taste ok, right? The only other thing I could think of is some type of infection...? Which one is properly carbed you think? Were short bottles filled first or last? How much priming sugar did you use and how much beer was bottled? Lots of questions...

    Carbonation causing color change?

Sounds like oxygenation. Not properly capping will cause that or an improper transfer can cause it too. Throw away the short squatty bottles and just use long necks. I'm surprised you say the flavor doesn't change. When that happens to a few of my bottles I notice a darker color and muddled...

    HELP! Fermentation chamber won't cool

I gave it more than 24 hours. Gave it 3 or 4 days to settle! I wouldn't say big temp swings. The garage is disconnected from the house and I do live in southern SC. So it does get hot here. But my mom has a fridge in her garage in IL and temps get super cold there in the winter and has no...

    HELP! Fermentation chamber won't cool

The lights do come on on both fridges when plugged in. They just don't 'run' and get cold.

    HELP! Fermentation chamber won't cool

Need some more help all. Just had the craziest thing happen. I got a new fridge. An old old old one from work and I figured, it's old and the story goes these old ones work great. Well it just died on me. Here's what I'm thinking, it was plugged into the exact same outlet in my garage as the...

New England IPA "Northeast" style IPA

Sorry for a slight hijack but for those of you that bottle, keggers out there please don't hate on us, I'm curious any best practices you do when bottling these hoppy IPAs. I know there are threads out there about bottling but want to hear what everyone is doing with these overly hoppy, juicy...

    Treehouse Brewing Julius Clone

I BIAB and if you need to change anything it would just be your grain bill for a possible loss of efficiency. How much you need to change the grain bill due to efficiency will be dependent on your set up.

That's interesting you bring up the use of lactose. To help get the sweetness and creaminess I thought about adding some into my IPA just to try. I know a Burial Beer in Asheville tried it in one of their beers. I found it very odd to see but when I thought about it it kinda made sense. I have...

That seems like an extremely low pH! She does say mash pH, so I wouldn't see why you need to add anything post mash? Has anyone ever gone this low with their pH on a clone or NE style IPA?

New England IPA "Northeast" style IPA

Brau - I saw on the Treehouse Julius clone thread someone post a note from Annie Johnson that one of the tricks to the NE Style IPA is to have super soft water and flaked grains (as we know) but the mash pH is in the 4.5-4.8 range. I would think that would lead to a thin beer and very dry. I...

    Repeated Oxidation

I felt I was getting oxidized IPAs as well. Without the ability to purge with CO2 or keg I think it's inevitable to not pick up some O2. However, my last two batches have come out well I feel. With no darkening or off flavor. The thing I did differently was filling my auto-siphon with StarSan...

New England IPA "Northeast" style IPA

Used 18% oats in this one. Since I bottle, everything kind of falls out so at the end I give the bottle a little swirl and dump it all in. This turned out pretty well. Kind of a Maine Beer Dinner pale ale clone minus the Simcoe. I wish I had the Simcoe. This one also came across pretty dry. I...
