    This. Also, being a small batch brewer, I find my 8L fermenting barrels a breeze to clean. Taking the time to reflect on things I can do better next time and keeping the peace in the house with a clean kitchen.

    How do I clear my beer?

    When you don't have the option to filter the grains in the lautering phase, try using a muslin cloth to keep your grains in check? I have used a muslin cloth with great success and cold crash it for 48 hours. I dont use Irish Moss or whirlfloc but i still manage to get clear beer :)

    I contacted the local water guy, turns out he is "Auckland" water guy too. I take the report and ad a twinch of gypsum to get a perfect 5.4 in my small batch (6L). I guess its triall and error to get it spot on.

    Great looking setup, I'm looking to do something similar. Question, aren't you worried about tannins in step 7? I was taught that if you squeeze the grains you would extract tannins, but I could have been mislead.

    Depends on the beer and the circumstances, but it happens sometimes. But as ThorGodOfThunder says, pop them all and let it ferment out and re-prime when it is fermented out completely. I would do that if it was me, I like my cats.

    You might still get a champagne eruption after a week even if it is carb'ed correctly. I would keep it in a cold place for the duration (with the precaution mentioned above) and just pour it cold in a big jug, that way you wont loose any beer due to massive head and still be able to serve it.
