    one month old washed yeast

    He's got a heck of a lot more than 8 batches there. When I make my starters I use about 1/2 to 1 tsp of yeast out of my washed jars to make a 1.5L starter 24-36 hours before brew time. Fermentations take of in 8-10 hours on average.

    what yeast is in your fridge?

    3 jars of WLP001 3 jars of WLP002 3 jars of WLP005 3 jars of WLP008 3 jars of WLP320 Enough to last a long time. To use, I take about 1/2 tsp from the jar and make a starter 24-36 hours before brew time.

    california ale yeast for a stout ?

    I'd say go for it. I brewed a Russian Imperial Stout using that yeast at the recommendation of my LHBS. It took 4th at the San Diego Fair Homebrew competition last weekend.

    San Diego County Fair Homebrew Comp (yay me!)

    Congratulations! I too was there. Got 4th in the Stout category with a Russian Imperial Stout. It was the second beer I made. Going to have to make another batch of it this weekend.
